We had a great potato season in the garden this year; so we get to try lots of new recipes using potatoes.  I wasn’t very familiar with the taste of tarragon; but like dill in potato salads so tried this recipe from Ina Garten’s “Barefoot Contessa How Easy Is That” and loved it – it’s a potato salad with lots of flavor!  I’ve made it now with both Prairie Blush and Yukon Gold potatoes; and it’s been very good both times.

2 lbs Yukon Gold Potatoes (6 to 8 potatoes)

Kosher salt

1 cup mayonnaise

2 tablespoons freshly squeezed lemon juice

2 tablespoons tarragon or white wine vinegar

Started Cucumber Salad

When we have cucumbers and onions coming out of the garden, this is practically a staple in our refrigerator.  Although it’s quite simple, it’s very refreshing and tastes like a “new pickle” to me.     

Cucumber Salad     

4 cucumbers peeled and sliced thin     

1 large onion halved and then sliced into thin rings     

3/4 cup sugar     

1/2 cup water     

1 cup white vinegar     

1/2 tablespoon dried dill     

  

Peel and cut the cucumbers into thin slices.  Mix with the onion rings.  Bring the sugar, water, white vinegar, and dill to a boil; pour over the cucumbers and chill.  The cucumbers will reduce as they chill in the vinegar [...]
