I love recipes that I can prepare ahead and then serve a group; and this is one of those dishes.  We had it over the Easter holiday and it was delicious – bread pudding for breakfast!  What could be better?  The recipe is from the Barefoot Contessa How Easy Is That? by Ina Garten.  I baked it ahead and then just reheated in the microwave before serving for breakfast.  And since it’s served with maple syrup, we added maple bacon for a really great start to the day.

Best Bread Pudding with Whiskey Sauce

Bread Pudding with Whiskey Sauce

This is a rich bread pudding that everyone seems to enjoy (and coworkers requested be posted here), and it really doesn’t need the whiskey sauce to be delicious.  The bread pudding recipe is adapted from Best Recipes by Cooks Illustrated while the whiskey sauce is from Penzeys spice catalog.

Bread Pudding

2 tablespoons sugar

1/2 teaspoon ground cinnamon

4 large eggs, plus 1 large yolk

3/4 cup sugar

2 1/2 cups whole milk

2 1/2 cups heavy cream

3 tablespoons bourbon

1 tablespoon vanilla extract

3/4 teaspoon freshly ground nutmeg

1/4 teaspoon salt

12 ounces firm white bread, sliced 3/8 inch thick & cut into 1 1/2 inch square pieces (app 8 cups)

100% Whole Wheat Bread Baking (Part 3) – Mixing & Kneading

In this series on baking great 100% whole wheat bread, Part 1 covered getting great whole wheat bread flour (see 100% Whole Wheat Bread Baking (Part 1)), Part 2 covered the basic recipe and the other ingredients needed (see 100% Whole Wheat Bread Baking (Part 2)), and this post covers mixing and kneading the bread.  The final post (Part 4), will give the details on rising, shaping, and baking.

This is a delicious breakfast (or snack) bread that gets flavor from not only cinnamon, nutmeg, and cloves; but also orange juice and orange liqueur.  The ingredient list looks long; but it’s just all the spices, and it goes together quickly.  The spices make it super tasty, and it smells wonderful coming from the oven.  The original recipe is from Ina Garten’s Barefoot Contessa Back To Basics.   

2 cups coarsely chopped dates (10 oz. pitted)

1/3 cup orange liqueur (like Cointreau or Triple Sec)

4 tablespoons unsalted butter (at room temp)

I’ve lost the source of this recipe  – but really like it because it can be assembled the night before, baked in the morning, tastes great, and serves a crowd.  The edges of this batch got a little crispy, but it’s still so tasty…..

6 tablespoons butter, divided

4 green onions, chopped

1 tablespoon flour

1 1/2 cups chicken broth

3/4 cup champagne or white wine

1/8 teaspoon dry mustard

1/8 teaspoon ground nutmeg

1/4 teaspoon black pepper

Whole Wheat Irish Soda Bread

Here’s a quick, easy, delicious, and healthier soda bread with lots of flavor – the orange zest and currants insure that it’s never bland.  It’s adapted from a recipe in Barefoot Contessa At Home by Ina Garten.

3 cups all-purpose flour, plus extra for the currants

1 cup finely ground whole wheat flour*

4 tablespoons sugar

1 teaspoon baking soda

1 1/2 teaspoons kosher salt

4 tablespoons cold unsalted butter, in 1/2-inch dice

1 3/4 cups buttermilk

1 extra-large egg, lightly beaten

1 teaspoon grated orange zest
