I swear this is the easiest fudge recipe I’ve ever made (it’s cooked in the microwave), and it turns out perfect every time.  I found the recipe because I was looking for goat milk fudge recipes, but whole cow milk should work too.  It can also be varied to make “dark chocolate” fudge by using ¼ cup regular cocoa and ¼ cup “special dark” cocoa instead of the ½ cup regular cocoa, or to make a peanut butter version by substituting peanut butter for part of the butter.  The batch shown is a batch made with the “special dark” cocoa – [...]

Date Spice Bread

Sliced Date Spice Bread

This is a delicious breakfast (or snack) bread that gets flavor from not only cinnamon, nutmeg, and cloves; but also orange juice and orange liqueur.  The ingredient list looks long; but it’s just all the spices, and it goes together quickly.  The spices make it super tasty, and it smells wonderful coming from the oven.  The original recipe is from Ina Garten’s Barefoot Contessa Back To Basics.   

2 cups coarsely chopped dates (10 oz. pitted)

1/3 cup orange liqueur (like Cointreau or Triple Sec)
