This appetizer is so easy it’s ridiculous, and it’s one of my favorites. Not only is it delicious, but we made this the first time just as the first of our Nigerian Dwarf does kidded one year – so I will always associate it with the happy event of new goat kids arriving too.
This uses sun-dried tomatoes in herbed olive that you can purchase at the store or you can reconstitute your own sun-dried tomatoes in some olive oil and herbs.
We make our sun dried tomatoes each year (we really dry them in the oven, the recipe is here), so we just reconstitute them in some good olive oil with Italian herbs. Or, you can purchase sun-dried tomatoes in olive oil at the store. The Bells Sun Luci brand has worked well for us.
- 1 small to medium Brie wheel
- 1 8.5 oz. jar Bella Sun Luci® Julienne Cut Sun Dried Tomatoes in Olive Oil
- Toasted bread or crackers
- Melt the Brie wheel in the oven at 350°F for 10-15 minutes. After removing from the oven, top with one drained jar of sun dried tomatoes. For a finishing touch, garnish with toasted pine nuts and fresh basil leaves. Serve with your favorite crackers or toasted bread.
