Equipment

  • Stick Blender
  • Microwave

Ingredients

  • 1 lb powdered sugar
  • 1/2 cup cocoa
  • 1/2 cup butter cut into small pieces
  • 1/4 cup whole goat or cow milk
  • 1 teaspoon vanilla
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  • Grease an 8" x 8" square pan to hold the fudge.
  • Combine the sugar and cocoa in a large microwavable bowl, and make a well in the center.
  • Place cut-up butter and milk in the well - do not stir!
  • Microwave on high for 2 minutes and add the vanilla.
  • Blend with a stick blender or mixer until smooth.
  • Stir in the nuts and pour into the greased pan.
  • Refrigerate until firm, cut into squares, and serve or package for gifting.

Notes

You can make "dark" chocolate fudge by using 1/4 cup regular cocoa and 1/4 cup "special dark" cocoa instead of the 1/2 cup regular cocoa.
Or, make a peanut butter version by substituting peanut butter for part of the butter.
