Calabrese Bites

Course Appetizer


  • 1 pint cherry or grape tomatoes (about 50) cut in half
  • 50 small basil leaves
  • 1 1/2 pounds fresh mozzarella, cut into bite-size pieces (I substituted fresh goat cheese)
  • 1/4 cup aged balsamic vinegar
  • salt and pepper (to taste)


  1. Slide a tomato half, a basil leaf, a piece of mozzarella, and another tomato half onto each skewer.

  2. Place skewers in a serving dish and drizzle the balsamic vinegar over the skewers. Sprinkle with salt and pepper (you can omit the salt and pepper and they are still delicious).

  3. Serve the remaining balsamic vinegar in a small dish alongside.
