Calabrese Bites

Course Appetizer


  • 1 pint cherry or grape tomatoes (about 50) cut in half
  • 50 small basil leaves
  • 1 1/2 pounds fresh mozzarella, cut into bite-size pieces (I substituted fresh goat cheese)
  • 1/4 cup aged balsamic vinegar
  • salt and pepper (to taste)


  • Slide a tomato half, a basil leaf, a piece of mozzarella, and another tomato half onto each skewer.
  • Place skewers in a serving dish and drizzle the balsamic vinegar over the skewers. Sprinkle with salt and pepper (you can omit the salt and pepper and they are still delicious).
  • Serve the remaining balsamic vinegar in a small dish alongside.
